Chicken a la Kiev
Chicken breasts (with wing attached)1 kg ,Chilled butter fresh mint leaves Refined1 cup Flour 1 tbsp eggs (lightly beaten)1 tbsp breadcrumbs1/2 tbsp oil1/4 bunch Method of preparation:
1. Flatten the chicken breasts by pounding softly between two dampened butter papers. 2. Place a ball of butter, in the inside of the chicken breast and sprinkle chopped mint leaves and salt/pepper. 3. Roll up the breast letting the wing bone protrude. Dredge each roll lightly with flour; dip in beaten eggs and then in breadcrumbs, taking care that the roll is completely sealed. 4. Place the rolled chicken in the freezer for at least one hour. 5. Deep-fry for three to four minutes in moderately hot oil, and keep in oven (1750C) for 10 minutes. Garnish with lemon and parsley. 6. Serve hot with sauted vegetables and french fries.
