Shredded chicken with noodles/lo mein



Quantity Chicken (Shredded) 150g Rice/Noodles 350 g Salt 150 g Egg white ½ tsp or to taste Sprig onion (Shredded) 1 Garlic (Minced) 5 Ginger (Minced) 1 tbl. sp. Green chillies (Chopped) 1 tbl. sp. 2 for deep-frying Oil 1 tsp Chilli powder 1 tsp Soya sauce 1 tsp Sesame powder 1 tsp Method of preparation: 1.Cut chicken into matchstick size shreds. Mix with 1 tsp corn flour, salt and egg white and keep aside for ½ hour. 2. Heat oil and deep-fry the noodles, crispy but not brown. Remove and sprinkle a little salt and keep in an airtight jar. 3. Keep the oil again and deep-fry the chicken for 2 minutes and drain. Then deep-fry the sprig onions for 1 minute and drain. 4. Remove all, but 3 table spoons. oil, when hot add ginger, garlic and green chillies and stir fry for 5 seconds. Add chilli powder, soya sauce, salt, add corn flour mixed with water and when it boils add the chicken pieces and sesame powder. 5. Pour the same in the centre of a serving plate. Decorate with the fried sprig onion shreds around the chicken mixture and then the outer round with the crispy noodles.
